The Knauz Autopark restaurant review for July 2012
Slyce Coal Fired Pizza Company
This month we travel to Wauconda to the Slyce Coal Fired Pizza Company, based on a recommendation we received about truly amazing pizza. I was told they had great décor, great pizza and amazing service. Now, I was a little skeptical about pizza that was worth a trip out to Wauconda, considering all the great pizza places here in town. Well, I’m glad to say it definitely was worth the trip.
My wife and I decided to make the trip this past weekend and truly enjoyed the experience. The décor is not what you would expect from a “pizza joint”. Decidedly upscale and fresh, you feel like you’ve entered a more traditional contemporary dining restaurant. On the Friday night we dined the restaurant was busy but without a wait to be seated, we enjoyed our meal on the patio that overlooks Main Street.

Our server for the evening was Angelina and she was fantastic. Not only with us, but watching her interact with the other guests on the patio was amazing. She took the time with each of us to review the specials and the pizza selections. Make no mistake the reason to dine here is the pizza. With 10 traditional red sauce pizzas, 6 white sauce pizzas or the option to design your own. To make things easier, the pizzas only come in one size a 12” sufficient for two to share. Using homemade or locally grown ingredients the pizzas are cooked in an 850 - 900 degree coal fired oven. No deep dish pizza here just a classic Neapolitan-style pizza cooked to perfection. We started with the soup of the day, a fennel sausage and vegetable soup in creamy tomato basil. Next we moved on to probably the best wings I have ever had. Not your traditional buffalo wings here. The wings are marinated in fresh herbs and lemon juice then roasted in the oven with caramelized onions. These wings are worth the trip alone. I then ordered a #5 (meatball, pepperoni, sausage and prosciutto) with the traditional red sauce and my wife ordered a spinach, green pepper and onion pizza. Both were outstanding, being prepared in a coal fired oven gives the crust a crispy, slightly smoky-flavor that complimented the ingredients perfectly.

For those not interested in pizza, Slyce does offer a few salads and sandwiches to choose from. Beer drinkers will be heaven with almost 40 microbrew beers available. Bottom line if you are looking for an enjoyable dining experience with great service and even better pizza, make a trip out to Slyce Coal Fired Pizza in Wauconda.
